Prawns with Squash, Sweet Potato leaves in Coconut milk
Bicolano dishes are known for cooking with green chiles and coconut milk. Among the well known dishes are Bicol Express, Laing and Jack Fruit cooked in coconut milk. All of these dishes comprise the same basic ingredients using different meats and seafood and this recipe is one of those using the same basic elements.
Ingredients:
1/2 kg Prawns
1 bunch of Sweet Potato leaves (Talbos ng Kamote)
1/2 Squash, cut into 1-1/2 cubes
1 cup Coconut milk
4 cloves Garlic, diced
1 small Onion sliced
2 thin slices of Ginger
2 long green Chiles
Salt and pepper
Saute garlic, onion and ginger for 1 minute. Add the sweet potato leaves, chiles and coconut milk and cook for 2 minutes. Add the squash cubes and continue cooking for another 2 minutes or until tender. Add the prawns until they turn orange and add a dash of salt and pepper to taste. Bona petit!
