Lechon Macao with Bitter gourd




Bittergourd or ampalaya in Filipino is a healthy vegetable when eaten, has a bitter taste and is proven to fight diabetes. In China, salt is massaged inside after scraping the inside and soaked in water before cooking to get rid of the bitter taste. Bittergourd goes well with either beef or crispy pork.

Ingredients:
2 pcs bitter gourd, sliced and scrape insides
1/4 cup vegetable oil
4 tablespoons of salt
2 slices of ginger, chopped
2 large onions, sliced
5 cloves of garlic, finely chopped
1/2 cup of oyster sauce
Salt and pepper to taste

Massage the core of each bitter gourd with a teaspoon of salt and set aside for at least 15 minutes. Slice the gourds according to the thickness you want and then soak in tap water to get rid of the saltiness. Heat a pan with 1/4 cup of vegetable oil and saute the onions, garlic and ginger for a minute. Pour the oyster sauce and mix in the bitter gourd and cover the pan for at least 10 minutes until the vegetable is cooked aldente. Throw in the sliced crispy pork and serve.
